Is Odoo oversized for my website project?
No. Due to the modular structure of Odoo, it is possible to run the website-module only. By doing that you have as much functionality as you need. If you want to enlarge your solution by adding a shop later on, you don't have to look for a new solutions. You just need to add one more module!
Is it possible to use Alfresco as a collaboration-portal?
Alfresco is perfectly designed for that. Alfresco is very strong in document-management, but it is also designed to provide a full-featured collaboration-platform. With Alfresco you are able to run a portal for your employees, customers or suppliers. You can assign everyone exactly the permission he needs within your portal.
I also want to use Zimbra offline as a desktop client. Is that possible?
Yes. Besides the webclient, there is also an offline-client available for Zimbra. You can install that client-software on your computer and have your e-mail available offline too.
